Observed raw ground beef (56F – Cold Holding); cooked rice (54F – Cold Holding); cooked sliced beef (57F – Cold Holding) stored stacked above the fill line in the top section of the reach in cooler near the walk in cooler. An employee moved the ground beef to the walk in cooler. The employee emptied half off the contents of the sliced beef and cooked rice and moved the foods to the walk in cooler. Observed sliced cheese (53F – Cold Holding); cooked chicken (52F – Cold Holding) stored stacked above the fill line in the top section of the reach in cooler near the grill. An employee emptied half of the contents and moved the food to the walk in cooler. Observed raw chicken (46F – Cold Holding); raw tilapia (47F – Cold Holding) in the breading station.
