SUSHI BAR: ; cream cheese 48, BBQ eel 48, Krab sticks 49, shrimp 48, salmon 47, tuna 48, escolar 47, tuna 47 (47-49°F – Cold Holding). Advised rapid chill to 41° or colder. After rapid chill, all temps falling as needed and will reach 41 prior to the 4 hour limit. New temps 43-44-45 with 1/2 hour yet to make 41°.
