Observed 3 deep covered containers inside tall reach in cooler on server station with cooked pasta at 9:13am (65 – Cooling)rechecked at 9:34am (64°F cooling), Per operator product cooling for approximately one hour. At the current cooling rate product will not cooled to 41°F within 6 hours. Operator moved product to walk-in cooler. **Corrective Action Taken**
35A-02-6High Priority – Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. Observed approximately 20 to 25 small flying insects landing on walls behind dishwasher machine ,under dishwasher machine and on clean utensils on dishwasher area near cook line. Observed approximately 10 to 15 small flying insects landing on walls on mop sink area near dry storage area.

Observed a container with non commercially packaged raw liver stored above an opened container with French fries inside reach in cooler on cook line.
