Observed flip-top cooler on cook line: corvina (54F – Cold Holding); mahi (49F – Cold Holding); egg wash (50F – Cold Holding); shrimp (47F – Cold Holding). Ambient air temperature of cooler 70F. Person in charge moved most stock to walk-in cooler too cool. Working product had ice bags placed on it and placed on four hour time control.
