Observed previously prepared and frozen beef and onions, chicken not date marked when made. Discussed with operator about freezing and date marking.

Observed service window and back door left open while flying insects present inside food truck. Person in charge closed screen to service window and closed back door during inspection. **Corrected On-Site**
