Observed Raw Chicken (47F – Cold Holding); Raw Beef (47F – Cold Holding); Cheese Slices (47F – Cold Holding); Baked Potato (48F – Cold Holding); and Potato Cake Batter (49F – Cold Holding) in 4 door reach in cooler across from stove on cook line. Items have been in cooler for less than 4 hours and satisfactory temperatures were taken this morning. The evaporator was frozen over. Operator contacted technician for repair and they arrived by the end of the inspection. Operator had employee move items to walk-in cooler. **Corrective Action Taken** **Warning** – From follow-up inspection 2024-11-20: Observed Stuffing (48F – Cold Holding); Mashed Potatoes (48F – Cold Holding); Sausage (47F – Cold Holding); Ham (47F – Cold Holding); Raw Bacon (51F – Cold Holding); Raw Salmon (51F – Cold Holding); and Raw Beef (51F – Cold Holding) in 4 door reach in cooler across from stove on cook line. Items have been in cooler for less than 4 hours and satisfactory temperatures were taken this morning. Operator stated the hot water heater is pending a repair, and parts are arriving today to restore the hot water at the establishment. **Warning** – From follow-up inspection 2024-11-20: Hot water has not been restored. Hot water heater part has been ordered and will be arriving between 10 AM – 12 PM and the plumber will be arriving shortly after the part is received.
