Operator employee came from outside, put on gloves without washing hands and start to engaging in food preparation. After brief education, employee then charged gloves and wash his hands. **Corrected On-Site**
03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -Observed raw chicken cold held at 44F in walk in cooler. Per operator, chicken placed in unit 3 hours prior to the inspection. Operator place ice packs on chicken for quick chill. **Corrective Action Taken**
