22-57-6High Priority – – From initial inspection : High Priority – Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Dishmachine ran 3 times, 87F max temperature. There is no 3 compartment sink to sanitize dishes. No sanitizer of any kind available at time of inspection. **Warning** – From follow-up inspection 2025-06-20: Dishmachine is still out of order due to a part needed. Operator installed 3 compartment sink and has sanitizer that is safe for food contact surfaces. 50ppm chlorine. **Time Extended** – From follow-up inspection 2025-09-10: Dish machine not being used, not working. New machine has been ordered. Has approved sanitizer for dishes. **Time Extended**

Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Room is used for wine storage and there is an employee restroom. **Warning** – From follow-up inspection 2025-06-20: Operator has installed a 3 compartment sink in the area where the handwashing sink and dishmachine is located. **Time Extended** – From follow-up inspection 2025-09-10: Plans approved 8/18/25, hand wash sink on plans has not been installed, operator removed states that it has been ordered, will be delivered in 3/4 weeks. Application form states ceilings in dish wash area, bar are frp, client application at establishment states metal. Ceilings in dish wash area are metal rafters. 2 walls in dish wash area are black curtains. **Admin Complaint**
