Establishment has no approved Alternative Operating Procedure. Employee handling ready to eat bread in prep area that was not going to be immediately heated to minimum temperature of 145F to allow bare hand contact. Discussed with operator and operator had employee wash hands and put on gloves. **Corrective Action Taken**
