High Priority – Employee dried hands on clothes/towel after washing. Observed operator wash hands and dry hands off on hand towel hanging off oven handles. The hand towel is not apart of a system that can renew the towel once it's soiled. Discussed with person in charge

High Priority – Employee touching ready-to-eat food with their bare hands – food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed operator barehand contact salad fixings while preparing salads. Operator washed hands and then used hand sanitizer prior to preparing salads. Discussed and emailed AOP to operator.
