Observed : in the back reach-in freezer, raw chicken over repacked beef. ALSO, on the cook line, the chicken was on the back row in the make table, followed by shrimp and beef. The new order was chicken-beef and then shrimp. **Corrected On-Site**
03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : chicken cooked earlier at 93°, sitting on the drain board. This was moved to the walk-in cooler, partially covered. **Corrective Action Taken**
41-10-4High Priority – Toxic substance/chemical improperly stored. Observed : spray WD-40 stored over bulk sugar, in dry storage.

02C-02-5Intermediate – Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed in the walk-in cooler egg rolls no date of preparation. These were made on Sunday.
