03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In top of reach in cooler on cook line, sliced cheese (46F – Cold Holding). Manager stated employee turned cooler on after stocking cooler and lids were open. Manager shut lids to help keep cold air in cooler. **Corrective Action Taken**
03E-02-5High Priority – Time/temperature control for safety food reheated for hot holding not reaching 165 degrees Fahrenheit for 15 seconds within 2 hours. In steam tables on cook line, pot roast (86F – Reheating @ 1.40 hours, 155F @ 2 hours, 169F @ 2.10 hours). Chili (115F – Reheating @ 2.20 hours, 137F @ 2.5 hours). Manager stated both steam tables were not turned up high enough. Manager turned both to full power and rechecked food items multiple times. **Corrective Action Taken**
