Observed employee handle raw shelled eggs, then proceed to touch clean plates and place ready to eat "arepa" on plate. Discussed with operator that when handling raw eggs there must be a glove change and handwash afterwards if handling ready to eat foods and clean equipment. Employee discarded food. **Corrective Action Taken**
08A-05-6High Priority – Raw animal food stored over/not properly separated from ready-to-eat food. In the sliver stand alone refrigerator across from cook line, observed a package of raw bacon placed on top a package of ready to eat pork. Operator removed raw bacon and placed for correct storage. **Corrected On-Site**
03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Near the handwash sink observed, raw shelled eggs (52F – Cold Holding). Operator stated eggs have been out for less than 30 minutes. Operator placed raw shelled eggs inside reach in cooler. **Corrective Action Taken**
