Employee at cookline stated the mushroom gravy was thawed inside the walk-in cooler and placed into the reach-in cooler approximately 10 minutes prior. Inspector had the manager move the mushroom sauce to the freezer to rapidly cool to 41F. **Corrective Action Taken**
