In grill side fliptop cheese, cheese, tomatoes cut at 49-51F. Ambient temperature of unit 54F during inspection. Person in charge states was in temperature at 7am when he arrived. Removed excess items and will keep small amount for remaining time. Person in charge called for service during inspection. Half and half in small glass door cooler at 45F. Person in charge states had out of unit for approximately 5 minutes. **Corrective Action Taken** **Warning** – From follow-up inspection 2025-10-02: Cheese in fliptop at 46F. Item stored in shallow metal pan. Person in charge states has been on line for 2 hours. Person in charge moved to other unit holding temperature. Ham, cooked onions, cheese, in unit 43, 41, 41F.
