In the stand alone reach in cooler across from the back door, observed raw beef on top of ready to eat sauces. Operator rearranged all food for proper storage. **Corrected On-Site**

In the reach in cooler facing the walk in, observed cut tomato mixture (58F – Cold Holding). Operator stated foods food was out for two hours prior to inspection. Operator placed foods on ice. **Corrective Action Taken**

In the walk in cooler, observed cooked beef and cooked rice without a date mark, operator stated foods were cooked three days prior to inspection. Discussed with operator the importance of date marking time-temperature control for safety foods.
