Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher machine at 000 ppm chlorine sanitizer. Employee moved sanitizer bucket and adjusted hose and re-ran machine two more times to retest at 50 ppm chlorine sanitizer. **Corrected On-Site**
03B-01-6High Priority – Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed pan of melted butter at end of cooks line by Panini press being hot held 78°F. Employee stated he had just melted the butter less than one hour prior. Employee then returned butter to grill top and a double boiler to keep warm. **Corrective Action Taken**

22-02-4Intermediate – Food-contact surface soiled with food debris, mold-like substance or slime. Observed soda machine in kitchen is soiled and has more like substance behind the nozzles.

22-20-5Basic – Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
35B-02-4Basic – Insect control device installed over food preparation area, by soda machine in waste, staff area of kitchen. Employee removed device and relocate it to an inappropriate area away from food prep or equipment.
