High Priority – – From initial inspection : High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Gouda (47F – Cold Holding); Cream Cheese (49F – Cold Holding); Raw Shell Eggs (50F – Ambient Air Temperature); Taylor Ham (47F – Cold Holding) in reach-in cooler to the right of the cook line. Operator turned cooler down and started to remove items to place in other refrigeration for rapid cooling. **Corrective Action Taken** **Warning** – From follow-up inspection 2025-12-01: Observed Milk (46F – Cold Holding) and Raw Shell Eggs (56F – Ambient Air Temperature) in reach-in cooler to the right of the cook line. Reach-in cooler ambient temperature at 50F. Items had been in the cooler overnight. All other items in cooler are in a cooling process. Operator has products iced down to aid in cooling process and has reached out to refrigeration company to service cooler.
