In make-line reach-in cooler: pico de gallo at 46f for approximately 1 hour, and feta at 61f for over 4 hours. Upon observation, feta was double panned and not allowing cold air to reach inner pan. Per operator, steam well was turned down after rush so rice doesn't burn. Instructed operator to reheat rice to 165f and turn steam well temperature to 135f or higher.
