Observed sliced Swiss cheese (42-51F – Cold Holding) over stacked container, per operator held out of temperature less than 30 minutes. Operator removed over stack cheese and placed in lower cooler to chill. **Corrective Action Taken**

16-55-4Basic – Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed dish machine not working. Operator is using the three compartment sink to sanitize equipment.
