In flip top reach in cooler on cook line across from stove, bamboo sticks (51F – Cold Holding); cut cabbage (60F – Cold Holding); cut lettuce (62F – Cold Holding); raw chicken (58F – Cold Holding). All items put in cooler approximately 3 hours prior.
