High Priority – – From initial inspection : High Priority – Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. High temperature dishmachine testing at 150F at dish level after running multiple times. Person in charge will utilize triple sink to sanitize until unit can be serviced. **Corrective Action Taken** **Warning** – From follow-up inspection 2026-04-15: Person in charge needs more time to repair. States has called to schedule service. **Time Extended** – From follow-up inspection 2026-04-22: Person in charge states has called for repair. Repair service states will replace. Will utilize triple sink until repaired. **Time Extended** – From follow-up inspection 2026-04-30: Person in charge provided correspondence from Ecolab contact 4.28 stating new machine will be ordered, no install date yet. Person in charge will continue to utilize dishmachine to wash and rinse, and sanitize in triple sink. **Time Extended** – From follow-up inspection 2026-05-11: At callback: .Warewashing high temp machine ran for multiple cycles with temps from 121F-154F. Operator had one strip that was not able to properly read. Discussed with operator to continue sanitizing at triple sink after washing and rinsing in dishwasher. Also, observed pipe in back leaking during sanitizing cycle. Operator stated he is calling ecolab since they were just out repairing machine on Friday. **Admin Complaint**
