03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. house made spinach dip, beef short ribs, house made lobster salad, cut cabbage, cooked noodles, cheese sauce, crab meat (45F-54F – Cold Holding) in reach-in cooler across from food warmer in corner of cook line. Chef stated he put tools in cooler this morning about 1.5 hours ago. Chef removed foods and placed in walk-in-cooler to chill. Also, cheesecake, chocolate cheesecake, house made tres leche cake, house made cream cheese whipping cream, key lime pie (60F-66F – Cold Holding) in reach-in dessert cooler on cook line. Operator stated items have been in cooler overnight. Unable to determine when cooler stopped being able to maintain temperature of 41F and below.
