03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. butter, vanilla ice cream mix, sliced American cheese, turkey deli meat (51F-53F – Cold Holding) in walk-in-cooler. Operator opened inner walk in freezer door to help chill walk-in-cooler. Operator stated they have already made arrangements for someone to work on cooler. Also, cooked chicken wings, half and half, sliced cheddar cheese, raw beef (47F-53F – Cold Holding) in bottom reach-in cooler at closed end of cook line. Operator stated cooler working fine earlier. Operator asked to place items in cooler that is able to maintain temperature of 41F and below to chill foods. Also, sliced provolone cheese, raw beef (60F-63F – Cold Holding) in in drawers below grill. Employee stated the drawer was opened during lunch. Operator stated she will ensure drawers stay closed. **Repeat Violation** **Admin Complaint**

Also, reach-in cooler at closed end of cook line next to hand wash sink unable to maintain temperature of 41F and below. Ambient temperature 52F. Observed gaskets torn in disrepair and door bounces back open when closed. **Warning**
