One dead fly stuck to deflector plate inside ice machine. 2. 14 dead flies on chemical storage shelf in back of kitchen. 3. 8 dead flies stuck to sides of clean dishes on dish rack in back of kitchen. 03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. hotdogs (51F, 53F – Cold Holding). Manager stated the hotdogs have been stored inside the cooler overnight and have not been removed today. Manager also stated she had opened the cooler earlier this morning. The cooler door was left cracked open during this inspection. The manager voluntarily discarded the hotdogs during this inspection. **Corrective Action Taken**
03F-02-5High Priority – Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Time marks missing from shredded lettuce and sliced tomatoes at front line. Manager stated both are being held using Time as a Public Health Control and they were placed on the line at 10am, then added the proper time marks during this inspection. **Corrected On-Site**
