Inside top of refrigerated make-table: shredded lettuce (72F – Ambient Cooling 2 Hours). The cooler has been turned off and has an ambient temperature of 72F. The employee stated she turns the cooler off to keep it from freezing up. She stated the lettuce was cut two hours prior and moved it to another cooler during this inspection.
