03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On top of prep table: raw shell eggs (78F ambient – Cold Holding). Employee stated the eggs have been at room temperature for two hours and moved them back into the cooler.

Inside top of refrigerated make-table: shredded lettuce (72F – Ambient Cooling 2 Hours). The cooler has been turned off and has an ambient temperature of 72F. The employee stated she turns the cooler off to keep it from freezing up. She stated the lettuce was cut two hours prior and moved it to another cooler during this inspection. No other TCS foods stored inside the cooler. **Corrective Action Taken**
