Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. Observed cooked chicken inside walk in cooler at 60F 90F – Cooling at 1:00 since 9:30-75-90F at 1:30) At current rate of cooling, food did not reach from 135F to 70F within 2 hours. Operator began reheat process to bring items to 165F to cool items from 135F to 70F with in 2 hours.
