Operator stated butter has been out a couple of hours. Discussed with operator about using Time as a Public Health Control. Operator stated he will just keep the butter in the cooler.

Observed approximately 20 dead roaches in the following areas: 2 under triple sink, 6 in storage room #1, 1 in storage room #2, 1 under reach-in cooler across from front counter, 2 under prep table, 6 in cabinet next to display case, 2 under dessert display case at front counter. **Warning**
