At glass door reach in cooler: cut lettuce (47F at 8:50am; 45F at 9:30am – Cooling) As per operator and label, cooling since 6:09am. At current rate of cooling, product will not cool to 41F within 4 hours. Operator moved to quick chill. **Corrective Action Taken**
