08A-20-5High Priority – Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. In make line reach in cooler raw chicken stored over raw lamb. Person in charge began rearranging. **Corrective Action Taken**
29-37-4High Priority – Spray hose at dish sink lower than flood rim of sink. Hose attached at hose Bibb above triple sink fully submerged in water in sink at time of inspection. No vacuum breaker observed on hose Bibb.
03B-01-6High Priority – Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Reconstituted chicken stock held in container at cookline at 94F. Recommend holding on time. Provided time paperwork. Has been out for 15 minutes per person in charge. Will hold for remaining time then discard.
