14-11-5Basic – Equipment in poor repair. Egg cooler near cook line not maintaining temp, at 70f cold holding. Shelled eggs had just been pulled from walk in cooler, assisted operator in setting up an ice bath. Reach in freezer under hot holding unit front line has tear in gasket.
