On the cook line, observed housemade pizza sauce (53F – Cold Holding); shredded cheese (52F – Cold Holding); meatballs (51F – Cold Holding). Operator stated foods have been out of cold holding for 30 minutes. Discussed a time control plan with operator and provided form. Operator stated foods will be used or thrown out by 6pm.
