Observed approximately 3 flying insects at the server line area drain. Observed approximately 2 flying insects in women's restroom. In sauté small reach in cooler béchamel, crab mix, pot pie mix, in unit overnight at 46-52F. See stop sale. In protein stand up reach in cooler steak, steak, chicken at 46-48F. Person in charge states has had unit open for inventory. Observed sheet pans may be blocking airflow. Began rearranging. In walk in cooler rice, potato, rice, béchamel, béchamel 44-45F. Person in charge states has be unit open frequently. Opened walk in freezer door to rapidly chill. **Corrective Action Taken** **Warning** – From follow-up inspection 2026-08-13: Crab mix, bechamel sauce in sauce reach in cooler at 46, 50F. Person in charge states brought out at 4pm, time marked with discard of 8pm during inspection. Will utilize time until serviced. Protein reach in cooler steak, chicken, steak 39-40F. 29-42-4High Priority – – From initial inspection : High Priority – Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Mop sink missing vacuum breaker on non chemical side of splitter.
