In the flip-top cooler top reach in cooler under the converter belt oven; meat sauce (56F – Cold Holding); butter mix (57F – Cold Holding); cheese (55F – Cold Holding); calamari (57F – Cold Holding); chicken (59F – Cold Holding) stocked in the morning around 1030 then as needed. Operator removed all items to the walk in freezer, at conclusion of inspection all items had lowered in temperature but above 41F. **Corrective Action Taken** **Warning** – From follow-up inspection 2026-09-17: In flip-top cooler top roc closest to conveyor belt oven, Tomato Sauce, butter mix, cheese all cold holding 46/45F. Operator relocated all other time/temperature control food for safety into different reach in coolers. Items left in reach in cooler intended to be held on temperature but also have time markers for when placed out on line.
