Establishment has no approved Alternative Operating Procedure. At kitchen, chef handled sliced tomatoes and cut lettuce with bare hands without an approved AOP. Advised operator of proper procedure for bare hand contact. Chef washed hands and applied gloves. **Corrective Action Taken**
