High Priority 1

#4High Priority03A-02-5

High Priority – – From initial inspection : High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. jalepeno cream cheese (50F – Cold Holding); cream cheese (46F – Cold Holding); sliced cheddar (46F – Cold Holding) Reach in cooler behind front counter was left open and parts of the cream cheeses above the reach in cooler threshold were out of temperature, as well as sliced cheese that didn't have a lid on it. I recommended that they keep the cooler lid closed when not in use to allow for proper cold holding. Operator put a lid on the cheese, closed the cooler lid, and moved the cream cheeses to the lower compartment of cooler to cool. When I returned for retemps the items had been put back on top and lids were off and cooler was open. The items temped the same. Operator moved items to walk in to cool. **Corrective Action Taken** **Warning** – From follow-up inspection 2026-10-29: jalapeño cream cheese (51F – Cold Holding); sliced swiss (46F – Cold Holding) Operator stocked the reach in cooler around 6am, all food came from the walk in cooler. Jalapeño cream cheese (51F – Cold Holding); sliced swiss (46F – Cold Holding). Cream cheese is over stocked, sliced cheese it not covered. Discussed with operator to not fill food passed the threshold of the cooler, and to keep coverings and lids in place as much as possible and to cool foods in walk in when they rise above 41F. Stop sale issued on jalapeño cream cheese, swiss cheese put in walk in to cool, retemped at 42F. **Admin Complaint** **Corrective Action Taken**
