Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine is not calibrated correctly to get chemical on items is dish washer. Machine has sanitizer but is not dispensing correctly. Establishment does not have any other sink except a mop sink. Establishment uses primarily disposable paper products for customers I.e. plastic baskets with wax paper, disposable cups, straws, forks, knives and spoons.
