Inspector arrived at location and spoke with operator about complaint the had been lodged, asked to see the area currently under construction and found that this area is where the only 3 compartment sink was installed on site. 3 compartment sink has been fully removed for floor install. Location is currently open and operating and serving food from kitchen. Operator stated the 3 compartment sink was dismantled on Monday 9/23/19 but complaint states observed employee washing dishes at hand wash sink at raw bar on Sunday. Operator had set up a make shift 3 compartment sink from bus tubs to wash rinse and sanitize on site.
