Observed Shredded Mozzarella Cheese (53F – Cold Holding); Housemade Tomato Sauce with Spices (47F – Cold Holding); Fresh Mozzarella Cheese Balls (49F – Cold Holding); and Fresh Garlic in Oil Mixture (47F – Cold Holding) in reach-in cooler. Operator stated items had been in reach-in cooler since 2:15 PM. Operator is currently powering truck with a smaller generator and plans to use larger generator for more power supply moving forward. **Warning**
