Observed Raw Beef (47F – Cold Holding) and Hot Dogs (47F – Cold Holding) in reach-in cooler to the right of the entrance to the food truck. Operator stated it had been in reach-in cooler for less than 4 hours. Operator removed to freezer to rapidly cool. **Corrective Action Taken**
