Inside make-table at cookline: shrimp (69F 3:00, 68F 3:30 – Cooling). Manager stated the shrimp was cooked, rinsed, and placed into unit approximately 20 minutes prior. Employee separated shrimp into smaller portions and placed pans into walk-in cooler with ice to cool to 41F. **Corrective Action Taken**
