03A-02-5High Priority – Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. TCS food held in flip-top nearest the back wall measured: cut tomatoes (50F – Cold Holding); hummus (49F); (49F – Cold Holding); cut lettuce (47F – Cold Holding); chorizo (49F – Cold Holding); sliced pepper jack cheese (48F – Cold Holding). Operator has had several service calls and a new compressor recently. Discussed options for better unit cooling with the Operator. Unit is loaded heavily with product in the lower cabinet, restricting airflow. Discussed less product, metal vs. plastic pans. Operator stated product was at proper temperature less than four hours ago. Unit was emptied to the walk-in cooler and repair company was called. **Corrective Action Taken**
