Observed beef stored above chill line of cooler. Operator removed the extra beef to store below chill line. Also, Sliced provolone (45F – Cold Holding) in top drawer below grill. Employee stated drawer was opened and closed a bit during breakfast business. Operator stated drawer will stay closed to chill cheese. **Corrective Action Taken**
