Diced tomatoes, lettuce and guacamole with diced tomatoes in the flip-top cooler at improper temperature. Operator stated they were placed into service approximately 3 hours ago. Items were double-panned and product in lower compartment was at proper temperature. Operator moved product to walk-in cooler for rapid cooling and will monitor closely. cut tomatoes (50F – Cold Holding); shredded lettuce (48F – Cold Holding); guacamole with tomatoes (49F – Cold Holding) **Corrective Action Taken**
