12A-07-5High Priority – – From initial inspection : High Priority – Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed cook handle raw chicken with gloves then remove gloves and add new gloves without washing hands. Inspector advised cook and he washed hands then added new gloves. **Warning** – From follow-up inspection 2023-11-15: At callback 11/15/23 observed cook hold non handled bowl while breaking and whipping raw shell eggs then proceed to handle clean dishes and plate foods for service touching clean equipment handles and equipment and clean plates for service to customers without changing gloves. Then remove and wad up gloves in hands the resolve without washing hands and touch clean plates and ready to eat foods and plate ready to eat foods for service. Leave kitchen and open server drawers and get clean utensils then return to line and touch ready to eat foods. Observed cook handle BLT sandwich with bare hands plate and cut with no gloves. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed dish machine unable to automatically dispense sanitizer. Found at 0 ppm. Operator will manually add chlorine to rinse cycle and called for repair. **Corrective Action Taken** **Warning** – From follow-up inspection 2023-11-15: At callback observed dishmachine unable to dispense sanitizer automatically. Operator had rigged a pump and was had pumping sanitizer into machine during dishmachine run. No test strips available. Dishes tested 0ppm on inspectors test strips. **Admin Complaint**
