High Priority – Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. As evidence of chlorine sanitizer 0 ppm, but dishes were washed, rinse and sanitize previously inside 3 compartment sink. Three compartment sink was set up with quat sanitizer 200 ppm. High Priority – Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employees touching their hair when trying the hat on, placed gloves on , but not hand washing in between.
