Basic – Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed ROP fish labeled remove from package and thaw under refrigeration, sitting on counter thawing at room temperature in completely sealed packages. Product partially frozen. Operator removed from packaging and put in walk-in cooler to continue to thaw. **Corrective Action Taken**

Basic – Grease on the ground and/or pad around grease receptacle. Observed excessive grease on ground beside and under grease dumpster.

Basic – Reuse of single-service or single-use articles. Observed vegetable cardboard boxes from tomatoes reused to hold ready to eat bags of broccoli. Operator removed to plastic bins. **Corrective Action Taken**

Basic – Unwashed fruits/vegetables stored with ready-to-eat food. Observed unwashed tomatoes stored over ready to eat vegetables in walk-in cooler.
