Observed glass door upright cooker (); chicken (44F – Cold Holding); eggrolls (46F – Cold Holding); chicken (44F – Cold Holding). Cooler iced up and no longer able to hold foods at 41F or colder. Operator just loading for lunch rush foods not in cooler for more than 45 minutes. Operator removed all to walk-in Cooke and will not use until able to cold hold foods at 41F or colder.
