As per operator for less than 2 hours. Operator placed items on ice to cool. Observed at cook line a bucket of marinated chicken (51F – Cold Holding). As per operator for less than 2 hours. Operator placed bucket into walk in cooler. **Corrective Action Taken**

36-73-4Basic – Floor soiled/has accumulation of debris. Observed floors soiled with food debris.
10-01-5Basic – In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed in dry storage area in buckets of rice, scoop handles in contact with the rice. Operator removed scoops and stored up right. **Corrected On-Site**
