In the reach in cooler observed raw fish (50 F – Cold Holding), as per employee stored in this unit since the night before. Employee discarded food item on site, in the cook line by the hand sink observed tomato sauce (53F – Cold Holding), as per employee outside for about 20 minutes, employee placed food back in the cooler to rapidly cool. **Warning** – From follow-up inspection 2024-04-19: Observed reach-in cooler at cookline Cut tomatoes (50F – Cold Holding); Cut lettuce (51F – Cold Holding). As per chef, been less than 1 hour. Products were moved to walk-in cooler for rapid cooling. **Admin Complaint**
